3 Ingredient Herb Tahini- zero waste, vegan

Tahini, or sesame seed paste, is one of my favorite foods. It’s used often in Mediterranean and Middle Eastern dishes, however it’s becoming more and more popular. If you think you’ve never had it- think again. It’s most famously used in hummus, giving it a nuttier taste and smoother texture.

Sesame seeds, which are usually the only ingredient in tahini, are a powerhouse nutrition-wise. They are an excellent source of copper, a very good source of manganese, and a good source of magnesium, calcium, phosphorus, iron, zinc, vitamin B1, selenium and dietary fiber. They also have phytosterols, which have been shown to reduce blood cholesterol, support immunity, and decrease cancer risk.

Luckily for all of us, sesame seeds (like all other nuts and seeds) are staples in most bulk sections of supermarkets. There are white sesame seeds and black sesame seeds; you can make tahini out of either kind, but white sesame seeds are more typically used. Because you can find them in bulk, you can purchase them as part of your #shopnaked grocery haul, meaning you can purchase them plastic and package free when you bring your own container! I use tahini in salad dressings, hummus, chickpea salads, and pasta sauces. This recipe also includes parsley (hello vitamin C) and garlic (hello antioxidants), making it particularly suitable for salad dressings. It’s vegan, gluten free, and dairy free and I can’t wait for you to try it!

3-Ingredient Herb Tahini

Ingredients

  • 2 cups white sesame seeds (bought in bulk!)

  • 2 handful fresh parsley (leaves + stalks)

  • 2 garlic cloves

  • Pinch of sea salt

Directions

  1. Place the sesame seeds and a pinch of sea salt into your NutraMilk machine and blend on the butter setting for 15-16 minutes.

  2. Add the parsley and garlic cloves and blend for another minute on the butter setting.

  3. Transfer into a glass jar and store in the refrigerator! It should last in the refrigerator for a few months.

  4. Use in salad dressings or in hummus!
