Lemon Coconut Bites

Sunflower seed butter makes for a perfect base for a bliss ball and doesn’t get nearly as much attention as it should. Sunflower seeds contain vitamin E (an antioxidant), magnesium (healthy bones + energy production), and healthy polyunsaturated fats. These delicious seeds are perfect to add to salads, a snack mix, or energy bites. In my quest to #shopnaked, I only buy sunflower seeds in bulk with my own containers/bags and without single use packaging (zero waste style!). The lemon and coconut flavor in this recipe pairs really well with the rich sunflower seed butter. Add more dates if you need these to be sweeter.

LEMON COCONUT BITES (makes 12 balls)

Ingredients

  • 6 Tbsp sesame seeds

  • 6 Tbsp sunflower seed butter

  • 6 pitted dates

  • 50 grams coconut flour (1/3 cup + 2 Tbsp)

  • Juice from 1/2 a lemon

  • Lemon zest

Directions

  1. Combine all ingredients in a food processor and process until combine.

  2. Use your hands to roll 1 Tbsp of the mixture into about 12 small balls.

  3. Store in a glass container in the refrigerator.

  4. Take a deep breath and enjoy!
