Chocolate Date Glow Bites

I’ve always loved a good at-home workout and Kait Hurley’s online move + meditate program is my favorite. I discovered Kait’s program in November 2017 and was hooked immediately. She has high intensity and restorative classes, ranging from 20-50 minutes. And, each class finishes with a meditation. I chose Kait’s Glow & Go class for day 2 of the program. This newer class has been a staple in my rotation. The combo of yoga + squats + jumps fires you up and leaves you the good kind of sore! (And, let’s face it, anything with “Glow” in the title is worth trying). After this (or any other) strong workout, let’s keep the glow going. These delicious, nutrient dense energy bites are full of nuts, coconut oil, hemp seeds, oats, and cacao. Let me break down how each ingredient will help you glow from the inside out:

Nuts are beauty builders and the healthy fats in them help combat inflammation in the body.

Coconut oil with its medium chain triglycerides are another source of healthy fats that support an active metabolism.

Hemp seeds also have anti-inflammatory and anti-aging omega fatty acids (and protein and fiber!).

Oats contain the beauty mineral iron, which helps with healthy hair and nails, and the anti-aging mineral selenium, which is also important for thyroid health (aka metabolism health) and is necessary to produce anti-oxidants in the body.

Finally, cacao, an antioxidant and phytochemical powerhouse that can boost skin hydration and reduce redness.

You're going to LOVE these nourishing bites. They are perfect after the workout, as a snack, or dunked in coffee! I can't wait for you to try!

CHOCOLATE DATE GLOW BITES (makes ~12)

Ingredients

  • 1/2 cup pecans

  • 1 cup oats

  • 10 dates

  • 1/4 cup coconut shreds

  • 1 tsp coconut oil

  • 1.5 tbsp cacao powder

  • 2 tbsp hemp seeds

  • Pinch of salt

  • 1 tbsp water (more if needed to get the mixture to combine well)

Directions

  1. Pulse the pecans in a food processor first for a few minutes to chop them up. Then add all other ingredients.

  2. Process until a large ball forms in the food processor (about 1-2 minutes).

  3. Portion the mixture into balls (a small handful of the mixture).

  4. Enjoy after Kait’s Glow & Go workout to keep that glow all day long.

  5. Store in an airtight glass container in the refrigerator.
