Sweet Fruit Parfait

This is one of my favorite ways to SNACK NAKED. “Snack Naked” is a phrase I came up with to encourage my clients and community to approach snacking differently. Snacks can support our health and the health of the planet when they are “naked” aka when they are filled with real, whole foods without any plastic packaging. Many packaged snacks are filled with questionable ingredients (i.e., fillers, additives, dyes, added sugar) and are packaged in single use, non-recyclable packaging that contaminate our food and the environment. The snacks that I approve of nutritionally are all made with real, whole food ingredients! Instead of relying on those packaged options, why not be part of something bigger? It’s time to #SNACKNAKED with me!

At my hugely successful event at Package Free on July 17, 2019, we made many naked snacks! It’s even more delicious (and sustainable) if you use local fruit! At the event, we used fresh blueberries and peaches from Local Roots (a customizable CSA in New York that has the most amazing produce). Most fresh fruits work beautifully!

SWEET FRUIT PARFAIT (makes 5)

Ingredients

  • 10 tbsp nut butter (almond, Pecan, Peanut, Hazelnut)

  • 5 pieces of Seasonal fruit (5 cups chopped) (peaches, nectarines, banana, berries)

  • 5 Tbsp Hemp Seeds (and/or Other nut/seed of choice)

  • 5 Tbsp Cacao Nibs

  • 1 tbsp Cinnamon

  • 5, 8 ounce glass jars

Directions

1.   Place all 5 jars on the counter and add 2 tbsp of the nut butter to each jar.

2.   Layer 1 cup of the chopped fruit of choice on top of the nut butter.

3.   Sprinkle on 1 tbsp of hemp seeds + 1 tbsp cacao nibs + a dash of cinnamon as the top layer.

4.   Store the glass jars in the refrigerator!
