Turmeric Egg Salad


Ancolie is one of my favorite places to eat in New York City. The food is amazing and it’s a 4 Star Certified Green Restaurant. They sell all the food in reusable glass jars that you can return for $2 off your next purchase. (I rarely return my jars though because I use them for EVERYTHING).

For this jar salad, I used my turmeric egg salad as the base and then loaded the rest of the jar up with vegetables. If you’re looking for an extra kick in your egg salad, the turmeric delivers on flavor and nutrition!



  • 2 hard boiled eggs

  • 2 Tbsp avocado (or 1 Tbsp Sir Kensington's Fabanaise)

  • 1/4 tsp turmeric

  • Ground pepper


  1. Mash the hard boiled eggs in a bowl.

  2. Mix in the avocado (or fabanaise), turmeric and ground pepper until combined.

    Note: The ground pepper helps absorb turmeric so you reap all of turmeric's anti-inflammatory benefits.

  3. Use as a based for an Ancolie Jar Salad or for the "meat" of a sandwich.
