Homemade 2 Ingredient Coconut Milk Creamer

This is my MOST POPULAR RECIPE. Everyone who tries it absolutely LOVES it!

My morning coffee brings me such joy and yet I’m always disheartened to read the ingredients in all of the dairy free creamers available. They have fillers, additives, preservatives, natural flavors, and a lot of sugar. They also come in single use plastic or non-recyclable containers…So, I had to make my own and it couldn’t be easier! (And I don’t like to use the word “easy” but this recipe really is!). I’m not surprised that this is my most popular recipe! It’s vegan, gluten free, dairy free and super creamy!

I use ~2 tablespoons of this creamer in my morning coffee. I make it on Sunday and it lasts the whole week. I use canned* coconut milk to stay plastic free. Whole Foods brand is my favorite. Trader Joe’s coconut milk does not work! I’m not sure why, but it comes out very clumpy!

*Note about canned foods: Make sure to purchase canned goods with "BPA free lining.” BPA is a hormone disrupting chemical and there’s research suggesting that it has negative health effects on the brain, heart, behavior, prostate gland of fetuses, and infants and children.

HOMEMADE 2 INGREDIENT COFFEE CREAMER

Serving Size: 2 Tbsp; Serves: 7

Ingredients

  • 1 can full fat coconut milk

  • 1 tsp vanilla extract

Directions

  1. Combine all ingredients in a blender and blend until creamy.

  2. Store in an airtight container in the refrigerator for the week! When it's cold, it becomes thicker and creamier.
