White & Dark Chocolate Pecan Butter Freezer Fudge

Are you ready to #snacknaked? It's time to embrace unpackaged, unprocessed foods that are healthy, low waste, and plastic and package free treats! Luckily, this FREEZER FUDGE ticks all the boxes. It's a zero waste, dairy free, added sugar free, nutrient dense, DELICIOUS treat that chocolate and non-chocolate lovers can all enjoy. (Yes, there are non-chocolate lovers and yes, I'm married to one)! It's a testament to how much I love Rob that I always make 2 batches of my treats, one with chocolate, one without.

It's amazing that five simple ingredients - pecan butter + coconut oil + dates + cacao + cinnamon - can make the tastiest treat. This recipe is zero waste. I bought the pecans and dates from the bulk section of the supermarket (check out my Guide to Shopping in Bulk here). And, I bought the the coconut oil, cinnamon and cacao powder in glass jars that I'll reuse or responsibly recycle! I used my favorite kitchen appliance, the NutraMilk, to make the homemade pecan butter and then to combine all ingredients to create a creamy, dreamy fudge.

These treats are filled with healthy fats from the pecans and coconut oil, fiber from the nuts and the dates, and antioxidants from the cacao. They are vegan, gluten free, vegetarian, grain free, and added sugar free!

Usually I make the fudge batter and freeze it as one block in a glass container and then cut it up after. This time, I used my silicon ice tray from Package Free Shop and it made the recipe that much easier! Once frozen, I popped out the squares and enjoyed the perfect sized treat.

WHITE & DARK CHOCOLATE FREEZER FUDGE

Makes 12 squares!

Ingredients

  • 4 cups pecan

  • 2 tbsp coconut oil

  • 4 dates

  • 1 Tbsp cacao powder

  • 1 tsp cinnamon

  • Coconut shreds (optional)

Directions

  1. Start by making the pecan butter in the NutraMilk. Place all the pecans in the NutraMilk and blend on butter cycle for 3-4 minutes until irresistibly creamy!

  2. Add the dates, coconut oil, and cinnamon to the NutraMilk and blend on the butter cycle for another 3 minutes, until creamy.

  3. Transfer half the mixture to the silicon ice tray (dividing evenly among 6 cubes).

  4. Add the cacao powder to the remaining fudge batter in the NutraMilk and blend for another minute or so on the butter cycle until combined.

  5. Transfer the rest of the batter into the remaining cubes in the ice tray!

  6. Add toppings of your choice (coconut flakes are great).

  7. Freeze for about an hour and then you're ready to pop them out, take a deep breath, and enjoy.
